An Indian traditional dessert delicacy made with carrots.

Ingredients

  • 2 lb carrots
  • 1/4 cup ghee
  • 10 chopped cashews
  • 10 chopped almonds
  • 3 cups whole milk
  • 1 cup sugar
  • 1/2 cup khoya
  • 1/2 tsp cardamom powder

Preparation

  1. Peel and finely grate the carrots.
  2. Add ghee in a wok and fry the chopped cashews and almonds until they turn golden brown. Remove and keep aside (leave the ghee in the wok).
  3. Add grated carrots to the same wok and cook until they change color slightly (around 5-8 mins).
  4. Pour the milk and let it boil until the carrots are soft, and the milk has thickened (around 20 mins).
  5. Add the sugar and cook until the halwa thickens and the ghee starts to separate.
  6. Turn off the flame. Add the fried nuts, the cardamom and the khoya. Mix well.
  7. Let the halwa cool before storing it in the fridge. Some people like to eat it cold while others prefer it nice and hot.
