Ingredients
- 2 lb carrots
- 1/4 cup ghee
- 10 chopped cashews
- 10 chopped almonds
- 3 cups whole milk
- 1 cup sugar
- 1/2 cup khoya
- 1/2 tsp cardamom powder
Preparation
- Peel and finely grate the carrots.
- Add ghee in a wok and fry the chopped cashews and almonds until they turn golden brown. Remove and keep aside (leave the ghee in the wok).
- Add grated carrots to the same wok and cook until they change color slightly (around 5-8 mins).
- Pour the milk and let it boil until the carrots are soft, and the milk has thickened (around 20 mins).
- Add the sugar and cook until the halwa thickens and the ghee starts to separate.
- Turn off the flame. Add the fried nuts, the cardamom and the khoya. Mix well.
- Let the halwa cool before storing it in the fridge. Some people like to eat it cold while others prefer it nice and hot.
